Chef Walter J’s Cuban Spice Rub Sweet Potatoes
1 ea Sweet potato, yam, or boniato
1 tsp Chef Walter J’s Cuban Spice RubTM
1 tsp Olive Oil
Method
1) Preheat oven to 375.
2) Slice potatoes into 4-6-8 wedges. Season with Cuban Spice Rub. Add
olive oil and mix thoroughly. Place on a non-stick or aluminum foil
lined sheet pan (cookie pan).
3) Bake for approximately 30-50 minutes or until fork tender and a little
crispy. The bake time depends on your oven and the thickness of your
potatoes.
