Chef Walter J’s Cuban Spice Rub Grilled Vegetables


1 ea Jersey Tomato
1ea Jersey Corn
1ea Zucchini/Yellow Squash
1ea Red Onion
1ea Red Pepper
1bu Asparagus
As needed Chef Walter J’s Cuban Spice RubTM
As needed Extra Virgin Olive Oil


Method

1) Preheat grill to medium.
2) Slice vegetables in large wedges. Season with Cuban Spice Rub. Add EVOO and mix thoroughly.
3) Place on hottest section of grill for 1-3 minutes or until tender. The onions and corn might take longer.
4) The grilling time depends on your grill and the thickness of your vegetables.
